
We create timeless, old world fresh and smoked meats . We use fresh pork sourced from a small family abattoir in Lancaster County PA. We make all our own spice mixes. Our ingredient list is clean, and every ingredient is listed for each sausage with No Fillers, No Gluten! When we use sweeteners, it is typically Agave or Dates.
We make our sausage the old-fashioned way, from pork shoulders, cut by hand. We grind, mix and stuff our sausage ourselves. Three generations of family working together, side by side, grandfather, father, and daughter. We're a small family business that cares about what we put in our bodies.
Dillsburg Farmers Market season is upon us. Every Saturday from 8:A to noon or so you can find us on the grounds of the Historic Dills Tavern in Dillsburg PA. So easy to find, with off street parking, expansive grounds, heated restrooms, and many other amenities, along with a major dose of history. Who could say no?

Thursday we made 65 pounds of sausage so we'd have plenty for our friends. Hopefully we won't run out again this weekend as we're making sandwiches at Perry County Beer Company in Duncannon PA.

This Kielbasa is a Traditional Polish Garlic Sausage. Many will be familiar with this style of sausage made in the coal regions of Pennsylvania. It's a very versatile sausage excellent on it's own, or in traditional Polish recipes.

Our pumpkin sausage has been described as "Everything wonderful about Thanksgiving wrapped up in one bite". We roast and puree fresh pumpkins, then add to our ground pork, and mix with the other ingredients for a delicious treat. This is a loose sausage for making patties. We have several customers who use it as a filling for ravioli.

Skillet cooked some of this tonight, March 6, for wife, daughter and myself, got rave reviews. I have to say I'm thrilled with this recipe. To say it's tasty doesn't do it justice. This sausage is NOT spicy. We take great pride in the fact that we create and blend all our own spice mixes, every single one. Our seasonings never come from a packet. They’re never purchased from someone else.

The perfect amount of fresh chopped sage. A very balanced sausage with no one ingredient dominant. They brown up nicely, the perfect accompaniment to eggs over medium. Add a slice or two of our dry cured bacon and you have a breakfast fit for a king or queen.
